middle of the Colombian Massif, the mountainous region where most of the country's major rivers are born — the Magdalena, the Cauca and the Patía. Surrounded by volcanoes and sitting between 1,800 and 2,100 meters, it is close to ideal ground for specialty coffee: high enough for the cherries to ripen slowly, which is where that honeyed sweetness and bright acidity come from. Stopping at a medium roast keeps those delicate notes intact. Take it darker and you trade the cherry and honey for smoke — which is exactly what our Italian and French roast versions of this same bean are for.
