It is wet-hulled in the usual Sumatran style, but the hulling is not done until the coffee reaches 30% moisture content, where most Sumatra is hulled at 45–50%. That extra patience produces a cleaner cup, accentuating the spicy, bright notes and downplaying the earthiness.
