honeybees, and the finished honey. This traditional form of honey has a character all its own. Each piece gives you the opportunity to enjoy the honey, discover the texture of the edible beeswax, and experience the work of the bees in a form that is both simple and remarkably close to its source. A Fresh Summer Harvest Our fresh 2026 Sweet Clover Comb Honey is made by our honeybees during July and early August, when sweet clover reaches its peak and summer begins to wane. Mild Herbal & Cinnamon Notes Sweet Clover Honey is considered a mild-flavored honey and often has a light herbal or cinnamon-like character. Kept in the natural beeswax comb, this honey comb offers a traditional way to experience these flavors just as the bees stored the honey. Natural Edible Comb The honey remains inside the beeswax comb made by the worker bees. The comb is fully edible, allowing you to enjoy the honey and natural wax together. No Heat or Extra Processing We simply cut slabs of fresh honeycomb from the wood frames and then cut them into smaller pieces for sale. No other processing step or heat is used to prepare this honey. From the Beeswax Comb to Your Table The beeswax comb is an important part of the story behind comb honey. Worker bees build the network of beeswax cells that becomes the honeycomb before filling it with fresh honey. Once the cells have been filled, the bees cap the surface with another layer of beeswax. This creates the edible sealed honeycomb that protects the honey inside the cells. The finished comb gives you a chance to see and taste the structure the bees created inside the hive. Each cell holds honey within the wax network, creating the distinctive texture and appearance that sets comb honey apart. Prefer Sweet Clover Honey Without the Comb? Why Sweet Clover Matters to Honeybees Sweet clover is more than the floral source behind this particular honey. It is also an important flowering plant for honeybees and other pollinators. In Minnesota, much of the former stands of wild sweet clover that once grew along roadsides and on vacant land have been lost. As these areas disappear, so do some of the natural sources of forage available to honeybees and other pollinators. We encourage planting clover where appropriate to help provide flowering forage for honeybees and pollinators. If you'd like to grow clover on your own property, Ames Farm off
